Ralphs Grocery had hams on sale for half-off this week so I picked one up and made my favorite baked ham that I call...

SWEET & SAVORY BAKED HAM WITH SAUCE

1 cooked ham, 10-12 lb.
1 can diced pineapple (in juice)
1 can tart cherries (in juice)
2 tangerines, peeled & segmented
1/3 cup spicy brown mustard
1/3 cup agave syrup (or honey)

2-3 tbsp coconut palm sugar (or light brown sugar)
1 tbsp ground cinnamon
1 tbsp ground clove
Several sprigs of fresh thyme
Several sprigs of fresh rosemary

1 cup orange juice
1/2 tsp salt (or to taste)
3 tbsp cornstarch dissolved in 3/4 cup cold water


Unwrap the ham and place in a 9x12x2 baking pan.

Dump the diced pineapple and cherries all around the bottom of the ham.

Evenly place the tangerines segments all around.

Dump the mustard on top of the ham and spread around with a butter knife.

Drizzle the agave syrup over the ham and fruit.

Sprinkle the sugar, cinnamon and clove over the ham.

Toss in several sprigs of thyme and rosemary.

Tightly cover with heavy-duty aluminum foil and bake 15 minutes per pound.

When done, remove the foil and place the ham onto a serving plater. Allow the ham to rest for 10 minutes before carving.

Dump the fruit and liquid into a large sauce pan along with the orange juice and salt. Bring to a light boil on high heat.

Gradually add the dissolved cornstarch, stirring constantly. Reduce heat to medium and simmer about 5 minutes, stirring frequently. If the sauce is too thin, add a bit more cornstarch (dissolved in water). If too thick, add a bit more water.

Serve with some lovely side dishes.

Sit back and listen to your guests scream in gastronomic ecstasy.

That looks SOOOOOOOOO good. Donnie is now eating pork after more than 2 decades of not eating it. He's done ribs, bacon, and pork chops, but not ham yet. This will be the recipe I use for our Sunday Ham Dinner this weekend. Thank you so much for posting the recipe.

Maybe we could pitch a Food Network show with vacuum collector 'chefs'?

Oh Tom, you'd better have smelling salts on hand! When I served it last night Arlee couldn't stop exclaiming how good it was -- and he's not one to ever lavish praises, believe me! I took some down to our neighbors and they also loved it. Let me know how it turns out!

P.S.: Since you're going to make it for Sunday Dinner, why not go all out with a Good Ol' Southern Sunday Supper! Green beans, sweet potatoes, buttermilk biscuits, mac & cheese and apple pie! :)

FANTASTIC!!! Pork is my favorite thing on earth!! Of course being from NC means I automatically love barbecue...And I love all kinds of ham...around here country ham is popular, but a city ham like this is great also..I usually stick pieces of pineapple with whole cloves and stick them all over the ham, then make a glaze of brown sugar and ginger ale with a little dry mustard,cover and bake it ,basting occasionally..but this way looks wonderful, I will try it.
