Meatloaf is a love or hate thing I know, but I happen to love a good one! Cold meatloaf sandwiches are also a good thing. Everyone makes it different, and ran across a recipe that I have served to guests here and co-workers, and there's never any left, so I thought I'd share.
Pre-heat oven to 375.
1.5lbs ground chuck
1 egg
1 pkg. beefy onion soup mix
2 tblsp. worcestershire
1/2 cup sour cream
1/2 cup bottled ranch dressing
1 1/2 cups Italian bread crumbs mixed with 1/2 cup Parmesan cheese
1/2 cup ketchup (for topping)see below
1/2 cup dk. brown sugar(for topping)see below
I mix with a wooden spoon after each ingredient added, then use my hands to thoroughly mix at the end for a couple of minutes. I don't use a loaf pan, just form into a loaf, and put in a foiled lined pan. I tent a piece of foil over the top, tight on the sides, ends open and bake for 1hr. and 15min. Take out and remove the foil, pour excess grease from pan, and gently pat the top of the loaf with a paper towel. Mix the ketchup/brown sugar and spoon over the the top and sides. Return to the oven and cook 15 more min. Take out and let sit 10 min. or so before slicing.
