I like to make lemon bars sometimes.
Not the wretched box mix trailer-chow kind,... only from scratch, with a good thick layer of shortbread and extra-tart lemon topping. I hop it up with an alarming dose of lemon extract and, believe it or not, Kool-Aid lemonade powder.
You can always cheat and just make the shortbread and buy a jar of good lemon curd to put on top. It’s close enough when you just want a quick snack.
I’ve been thinking about making peanut butter cookies lately.

For the holidays I just make classic sugar cookies with the old vintage cookie cutters, thumbprint cookies, and those white balls that have several names, Polish wedding cookies/snowball cookies, etc,...
Those are the cookies Grandma always made, so that’s what everyone wants.

All his recipes are excellent and simple.
