Sweet and Sour Supermoon, er, Chicken!

Well, we didn't get much eclipse action here at Casa Electrolux because it was so cloudy and overcast we couldn't see the moon at all.

I made Sweet and Sour Chicken consisting of chicken breast chunks, red bell peppers, green bell peppers, white onions, celery, carrots, mushrooms, cashews, water chestnuts, bamboo shoots, bean sprouts and pineapple.

I simmered it in a sauce of chicken stock, reduced-sodium soy sauce, fresh lime juice, rice vinegar, pineapple juice, coconut palm sugar, agave syrup, Chinese Five Spices, ginger, a pinch of ground yellow mustard, a dash of salt and thickened with corn starch.

Served with sprouted brown rice.

I didn't see it here in Scotland either. It happened at 01:10 our time and by 00:30 I thought there was a chance I might fall asleep (rare for an insomniac like me!) so I couldn't risk getting up to see it in case I then lay awake throughout the wee hours and was even more of a zombie than usual today.

The pictures are spectacular though. I really do want to get back into astronomy - fascinating stuff.

That meal looked delicious! I'm not a sweet and sour lover but would have definitely tried that.
