if anyone would like to give them a try? Oatmeal Chocolate Chip?

2 sticks room temp salted butter
2 cups DARK brown sugar
2 eggs, room temp
1 tsp good vanilla.
Cream this together, in another bowl combine
1.25 cups ap flour
1 tsp baking soda
3/4 tsp kosher salt,mix together and slowly add to creamed mixture.
Mix completely but don't beat till runny.
Slowly add 3 cups 5 min oats, I actually prefer store brand to Quaker
add 2 cups chocolate chips,my favorite brand Guittard, or butterscotch , or 1 cup either and a cup of chopped nuts.
scoop size 40 ice cream scooper, or 1.5 Tbs measure on to parchment lined baking sheet or silpat lined.
Bake at 350 for 12-13 min, depending on oven and cooking sheets, done when middle is still soft, not totally set. Cookies are like eggs, if they look done, they are past done.

Hey Dave, those cookies look yummy! Just wondering though, can you substitute regular brown sugar or do you absolutely have to use the dark brown sugar?? We don't have any "specialty" grocers in my area, just the regular big box grocery stores most of us Canadians are used to. So finding dark brown sugar may prove challenging.

I hate to say it, but they are not the same with golden brown sugar, still good though! Keeps them soft and a bit caramel tasting. Works in place of the sugars for peanut butter cookies too. I get raves.
 
Thanks for the great recipe. I've always been able to find dark brown sugar sitting right next to the golden brown variety at all supermarkets I've ever been to.
 
My grandfather was a chef and had his own bakery in the &#39

1940s. He taught us how to make wonderful things. I have a recipe box w/ recipes from him, my great aunts, relatives in Ireland, my late mother, etc. It's nice (and a bit sad) at times, to see all of their handwriting from so long ago.
This Christmas time, I plan to invite every relative above ground to a get together. EVERYTHING they'll eat will be from a dead relative. To quote Andy Williams, "There'll be scary ghost stories and tales of the glories of Christmases long ,long ago. In this case, it'll be food served in this very house, from long ,long ago. Do you mind if I add your cookies.... from a "live person"?
 
:-) Flattered! I have an older friend, my mom's age really, Polish. Her mom and dad were a riot and loved when they came to visit. She has her dad's hand written cook/ bake book its interesting! He was a fireman and a professional baker. I get it.
