Can the actual motor from a Kirby Sentria model be swapped into the G5 (five)power plant?

I believe so. Almost all Kirby Generation series parts are interchangeable.

G3-g7 are I believe sentria may be different power plant it may be the same but transmission are g3 g4 same. G5-G7 and sentria and sentria 2 have different transmission.
In short g3-g7 are similar after that research.
The sentria 2 transmission does something in reverse the sentria transmission doesn't.
The gearing ratio is different for transmissions too.
So not all interchangeable.

Yes, all G series motors are the same.
The only difference is the pulley that drives the transmission, the early pulley was white the later pulley was a dark grey or black.
The difference in pulleys is the number of teeth and size (one is just slightly larger than the other).
