Microwave Coffee Cup French Toast
(Adapted from foodnetwork.com)
2 slices of bread (I used whole-grain)
2 large eggs
6 tablespoons milk
1 tsp sugar (I used coconut palm sugar)
½ tsp vanilla extract
¼ tsp ground cinnamon
A large coffee cup or microwave-safe bowl
Brush the coffee cup (on the inside!) with softened butter.
Cube the bread into 3/4-inch squares and dump into the coffee cup.
Whisk together the other ingredients and pour over the cubed bread.
Microwave on High for two minutes.
Overturn the mixture onto a small plate and microwave for another minute or until all liquid egg has disappeared. (A minute was the perfect time with my microwave.)
Drizzle with syrup (I used agave syrup) and serve.
