BANANA OATMEAL COOKIES
Applesauce takes the place of the "halfa-stick of buttah and halfa-cup of shuggah" [chanelling Paula Deen hahaha!] that many cookie recipes call for.
I made these once before and found that they “needed something.” They were as dry and tasteless as cardboard. So I tried adding one egg and just enough coconut palm sugar and butter to lift up the flavor a bit and they came out great – not overly sweet and greasy but moist and flavorful. The dash of salt also helps a lot.
3 mashed ripe bananas
2 cups Quaker oats (not instant)
1/2 cup raisins
1/2 cup pecans
1/3 cup unsweetened applesauce
1/4 cup unsweetened almond milk
1 med. egg
1 tbsp butter
1 tbsp baking powder
1 tsp vanilla
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
(Coconut palm sugar to taste if bananas aren’t sweet)
Mix it all together in your electric mixer.
Drop by heaping tablespoons onto a nonstick cookie sheet. Bake at 350 degrees F for 15-20 minutes or until golden brown and slightly crisp around the edges.
