Here’s a fruit cobbler based on a recipe from my Aunt Gwen Lester Buff in South Carolina. This recipe is easy but delicious. It’s not overly sweet, and the crust is light and crisp.
My modifications: Whole-wheat flour and coconut palm sugar, and the addition of cinnamon and vanilla extract to the crust.
FRUIT COBBLER
1 cup sugar, divided
1 quart fresh fruit
(blackberries, blueberries, raspberries, sliced apples, or sliced peaches - or whatever you have)
1 stick butter
1 cup whole-wheat flour
1 tblsp baking powder
1 tsp cinnamon
1 cup milk
1 tsp vanilla extract
1. Preheat oven to 375 degrees F.
2. Put 1/2 cup sugar over the fruit and gently stir.
3. Melt butter in a 9 x 13 inch baking dish.
4. Mix flour, 1/2 cup sugar, baking powder, cinnamon and milk, stirring until well mixed. Stir in the vanilla extract.
5. Pour batter on top of butter - do not stir.
6. Spread fruit over batter but do not stir. (The batter will rise and cover most of the fruit.)
7. Bake for 35-40 minutes or until golden brown.
8. Remove from oven and let cool off a bit.
Serve warm with vanilla ice cream.
