FRENCH TOAST LOAF
(for lack of a better name)

This was the happy result of a culinary accident: I had made up some French Toast the night before and put in the refrigerator. That was too long – in the morning the bread was so frail and mushy that I couldn’t get it out of the dish and onto the griddle. So I just dumped it all in the mixer and churned it up. It really came out great!

3 tbsp butter at room temperature, separated
1/2 cup all-purpose flour
1 cup milk
6 large eggs
2 tablespoons brown sugar (I use coconut palm sugar)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 tsp baking soda
A pinch of salt
6 large slices of day-old whole-wheat bread*
Agave or Maple syrup

Preheat oven to 350 degrees F.

Sift the measured flour into a large electric mixing bowl. Slowly blend in the milk with the whisk attachment.

Add the eggs, sugar, vanilla extract, cinnamon, baking powder, baking soda and salt. Mix with whisk attachment just until smooth and well blended.

Cut the bread into approx. 2” squares and dump into the egg mixture. Allow to stand for 10-20 minutes until the bread is fully soaked with the egg mixture, then mix with the spatula or beater attachments until fully mixed.

Liberally butter a two-quart rectangular Pyrex dish (7” x 11”).

Pour the mixture into the Pyrex dish and bake for 20-25 minutes until golden brown and a toothpick inserted in the center comes out clean.

When done, remove from the oven and brush with butter and syrup.

* If you use fresh white bread, it will just clump up and make a mess. Needs to be slightly stale whole-wheat bread.)

I made French Toast the other day-Use whole wheat Rye bread slices.Make the batter-4 oz of milk,2 Tablespoons of Brown Suger,A few shakes of Cinnamin,and two whole eggs.Put this into the small Blendtec or VM container and breifly blend a Lo speed.Or I use the Sunbeam mixer.Either one works well.Then like other French toast-soak the peices in the batter and fry in the electric frypan with LOTS of butter!I warm my syrup--real maple in the microwave.HATE putting cold syrup on hot French Toast or pancakes.
 
Use any bread

you prefer. Why not? Soak the bread and egg mixture over night, top with pecans or whatever, even syrup then bake it.
Perfect for brunch, or Drunch even with bacon in it. Drunch is a word I coined for lunch and dinner combined.
 
I don't need to soak my bread slices overnight-yes,they would turn to mush-a few minutes is all they need.If I had to soak peices overnight-would find something else for breakfast.When I get up-I am HUNGRY and want to eat NOW-NOT wait overnight!
 
Gluten, gluten, and even more gluten! If you just only knew how it's rotting your guts you wouldn't even think about gluten any more! It's pure poison, poison I say!!! Your poor little villi after years of abuse will turn into cancerous polyps if your not careful!

yes, if your happen to have surilliac or other allergy to it, and too much of anything can be bad for us.
I tend not to believe infomercials trying to sell suppliments all the way. Some of those are also bad for you.

And there lies the problem. Remember back in the day when a loaf of bread actually went stale. Now the stuff is like the food of the gods -- it stays fresh for an eternity with all that bleach, sugar, super packed gluten, and all the other little goodies and preservatives which helps seal in its chemical freshness for years. Yes, there's nothing really any better then to give yourself a chemical colostomy and a 42 inch waist line with the filth they pass off as bread nowadays. You know, we're not even talking about the diabetes and other health issues this garbage causes. And a fool and their money is soon parted with supplements! The only time you need a supplement is when you have a metabolic deficiency of some kind, but that generally goes away if you would just only start eating right, instead of devouring all that arsenic poison which comes in plastic shrink-wrap! You know, if we humans eat enough of that polluted venom, we too will wind up in a plastic bag...A Body Bag with a bloated, extended, dropped gut! 
 
...Because if you eat enough garbage in your life you sorta start getting brainwashed after a while. Why, if you were brought up on deep fried rat you'd say that it was some pretty finger lickin' good stuff, or nobody can fry rat like my mamma could. In a lot of ways, we have been conditioned to like certain foods, but that's only to be expected. If it was me and I had a choice between a fried French fry and a cigarette, I take the cigarette and I don't even smoke! One reason is a fried French fry produces a particularly nasty carcinogenic chemical, and another reason, and it is a good one...It offends the taste buds -- Like seriously bad!     
 
Ill tell you one thing!

I have eaten Charles cooking and its really good, I spent some time in LA in August 95 and trust me, Not only is Charles Lester a great cook, he is a generous great friend.He knows good Southern cooking too being raised in Virginia!
