Have you ever thought of submitting your recipes with yourself to appear on the cooking networks OR like that new show on NBC Food Fighters.. I think you all have enough talent to beat the professional chefs. I think it would be fabulous if someone from on here went on after reading these delicious recipes & winning! There is a lot of hidden talent on here besides collecting & I think you guys/gals could do it too!
 
Hahaha & that would make cooking tv worth watching!! Other then a tipsy Julia Child omg I could just see it now...you're not chopping that right!!! Grabbing the cast iron skillet & smashing their hand..now do it right!!!

I am with you.  Grew up in South Georgia - southern cooking is really all I know and like you I could loose it but it would not be the stove they would be looking for!!

I dont peel things the correct way or handle a knife the "Proper" way...but it works for me..so leave me the hell alone!!! I dont have time for someone to tell me what im doing wrong!!LOL

Wouldn't it be great to get Hans to show the proper way to make Southern Biscuits on video? I've tasted them many times, and they are the BEST. I know it all starts with the right flour (Virginia's Best) and buttermilk. But there's some technique he used to cut in the butter. I'm not sure what it was (I was playing with his new in the box Air-Way 88 while he was making the biscuits). I think it would be wonderful to have him on a cooking show. The "new" Paula Deen? Or the "new" Betty Freezor.
 
Lol speaking of freezer,I saw a 50s GE fridge at a pawn shop yesterday! My friend called it a 'bomb-shelter fridge', it looked like it sat in a barn for 40 years! Somebody tore the price off it, I'm glad they did! That fridge was $180, missing the shelves, too! Yikes!

Re Biscuits..

The secret really is in the flour ...I keep trying other brands, but still go back to the Virginias Best...I tried some Gold Medal one day just to see if a northern flour would work.....id just as soon use it to patch cement with!!! definately not a flour for biscuits, it must be soft winter wheat, someone said try Hudsons Cream flour....wayyy too coarse...and forget unbleached, grey biscuits are not appetizing to me LOL, no more than pasty white gravy is!..yuckkk...another thing is, never use anything but whole buttermilk, anything else and you might as well use water!People think the technique is the important thing, it is with a all purpose or hard wheat flour, but you can knead the devil out of dough made with a good self rising soft winter wheat flour, and it only improves your bread..
