That time of the year guys! Many folks favorite cookie, and my pain in the wrist, for days! Mod of Ina's Ultimate Ginger cookie! Double recipe only makes 20! Soft , spicy, yummy! Whole house smells like heaven! Had to double the double of course!

I had fear you might ask! One thing I always have to remember, the silicone baking liners, upside down! The spiced will play through the next few cookies if I don't.Soon, when hands are working better Charles, promise.It's Barefoot Contessa's Ultimate Ginger cookie, with the crystallized ginger missing. Not fond of it and pricy.

To catch up on my baking tonight...A Japanese Fruit Cake is in the works along with about 5 kinds of cookies.
 
I hope I don't mess this up, weeks of pretty heavy pain meds. Its a very specific recipe too.
Ina Garten's Ultimate Ginger cookie, revised by me. Hope you enjoy.



4.5 cups ap flour
2t baking soda
4 t cinamon
1T ground cloves
1/2tnutmeg
1t ginger
1/2t kosher salt
sift together in a bowl

2C dark brown sugar
1/2C veg oil
2/3 C unsulfured molasses
2 eggs+ 1 yolk

In stand mixer, paddle attachment, beat sugar, oil and molasses on med speed 5 minutes. Add the eggs and beat 1 minute, stop and scrape, beat another minute.
With mixer on low, slowly add the dry mixture, and beat on medium 2 minutes. Mixer may jump around a bit with either procedure, its stiff and sticky.

Scoop with large ice cream scoop, roll into ball and roll in sugar, normal or I like washed raw sugar!Place onto parchment or the back side! of silpats, the spice will flavor them for a few uses otherwise! I use size 20 scoop, 13 min at 350, makes large cookie. For smaller, medium scoop, size 40 for 11 min. Dark cookie, you can't tell if it's done or not. Remove and rest on cooling rack.
