With all this awful Covid 19 stuff, and the inability for families to celebrate Easter as a large family, I decided to do something I've not done in almost 25 years. I found my later mother's recipe for chocolate covered peanut butter AND coconut Easter eggs. I've decided to make them again this year.
Does anyone make any special Easter treats?

I made a yellow cake for Easter.

My grandfather's recipe, I've made it every year, usually, in a "bunny pan".
Today, I made 86 peanut butter eggs, ready to "dip" in chocolate tomorrow.
They are a lot of work. NOW, I remember why I haven't made these in almost 25 years! A mess, but, they are very nice.
 
A friend of mine asked me to make a birthday cake for his wife and since I love baking I told him no problem. He and his wife are from Serbia so I was googling around and found a few recipes for Serbian cakes and even a whole channel on Youtube of an older lady known as "Baba" making traditional Serbian recipes. But man oh man am I a little nervous of not doing a good job. Totally out of my comfort zone.

How do you make the easter eggs if you don't mind sharing? My mom loves the Reese's eggs that come out at Easter. She recently got out of the hospital after totaling her SUV. Some guy was looking at his cell phone and crossed the centerline, hitting her head on. Making the peanut butter eggs would help make me the favorite of her three sons. 
 
Sure! Here it is!

There are variations.
This recipe should yield 84 eggs.
In a bowl,put in one half pound, or. an 8 ounce pkg of cream cheese.
Add 1 half pound of butter (some use oleo) DON'T.
Cream this together.
add (3) pounds of confectioners sugar.
{You may add fruit, or nuts} I don't
Add 1 pkg of shredded coconut (IF YOU WANT COCONUT CREAM EGGS)
Add 2-3 generous dollops of peanut butter (NOT CHUNKY)
Shape into eggs (on a spoon, empty into you hand and roll like a meatball) Place on a parchment lined sheet and refrigerate overnight.
THEN:
take an 8ounce pkg of semi-sweet chocolate OR milk chocolate disks, add 1 half teaspoon on vanilla, 2 tablespoons of oleo.
(Some people add paraffin wax) I DON'T.
Melt and boil on a double boiler.
Dip eggs and let set/dry.
Generally, the peanut butter eggs are in milk chocolate, as, the coconut eggs are in dark.
It's a "project". But.... ENJOY !!
