We just make chili as normal but use the Rotel Mild canned tomatoes. If it was just me eating it I'd use the regular hot can of Rotel plus more added peppers.
 
Here's my version...

EASY BUT IMPRESSIVE CHILI

1 lb ground beef, turkey or chicken, or
+/- 2 cups shredded cooked chicken meat
(I prefer the latter)

1/4 cup olive oil

1 med onion, diced
1 med green pepper, diced

1 can red kidney beans
1 can black beans
1 can white pinto beans
1 can refried beans
1 (12-oz) can chopped tomatoes

3 packets chili seasoning mix
Chili powder to taste (how hot do you want it?!)
Salt to taste
1 tsp paprika
1 tbsp brown sugar
1 tbsp Worchestershire sauce
juice of 1 lime

2 cloves fresh chopped garlic
Fresh ground black pepper to taste

Lightly brown the meat in a large stew pot with the olive oil, onion and green pepper.

(If using the shredded cooked chicken, saute the onion and green pepper until onion is transluscent then add the chicken, stir-sauteeing until warmed, then continue with rest of recipe.)

Dump in all the canned ingredients. (Note: Check chili seasoning packet for directions as to whether or not to drain the beans. Some brands say to drain, some say don't drain.)

Dump in all the other ingredients. Stir all up. Bring to a gentle boil on med high heat, reduce heat and simmer for a while, until it smells heavenly and is nice and thick. Stir often while cooking.

After it's simmered a while, add in the chopped garlic and cracked black pepper. (You don't want to add these in too early because they just get cooked away.)

Served on toasted, sliced hamburger buns.
