Gosh, I tend to wing it also! Normally 1-2 lbs diced stew meat,patted dryish? tossed in a plastic/ paper bag with cup? flour salt and pepper, or season the meat and then flour. Brown in olive oil, med heat in dutch oven in batches, brown not steam, and remove when it has some color. Deglaze with V-8 juice, no kidding! some Worcestershire sauce, and a few cans good beef broth, simmer and scrape bottom of pan to get up the fond.Add diced veg, 4 stalks celery, 4 carrots, some potatoes, waxy kind better than baking.Add 2-3 bay leaves, some thyme, lid and simmer an hour? Retest for seasoning ,adjust salt, pepper, add frozen green beans, lid again, till all veg are tender. Turn off the heat and I add 1 cup frozen peas.Cover and let it rest.I hope you guys enjoy, its just stuff I like to use.
