Sanitaires are not the type of vacuum cleaners you want to clean out a restaurant! I'm cleaning one of the Sanitaires at work and it is so gross! Look at all the GUNK I SCRAPED out of it. It leaves such and awful smell in the air too! But they are not going to listen, they think that this system is the perfectly fine. The waitresses vacuum up everything, the vacuum breaks, I fix it, repeat
