ULTIMATE THREE-CHEESE MACARONI
(Based on Iturea Gibson's recipe)

5 cups cooked macaroni - approx. 4 cups uncooked
(I used whole-wheat macaroni)

5 tablespoons butter, melted

More butter for greasing casserole pan

2 large eggs, slightly beaten

1 teaspoon salt (or to taste)

3 cups milk

3 cups freshly shredded extra-sharp white cheddar cheese, divided

3 cups freshly shredded mozzarella cheese, divided

1 cup soft bread crumbs

2/3 cup freshly shredded sharp parmesan cheese

Paprika for garnish


Cook the macaroni as directed on package. Do not overcook it. Thoroughly drain in a strainer when done. (Do not rinse.)

Place macaroni and melted butter into a generously buttered 9x12 Pyrex casserole dish and toss until evenly coated.

Add the salt, milk, and half each of the cheddar and mozzarella cheeses and gently mix it all together.

Whisk the eggs in a bowl first and then stir into the mixture.

Evenly sprinkle the remaining cheddar and mozzarella cheese on top, then the bread crumbs. Top it off with the shredded parmesan and a light dusting of paprika.

Cover tightly with aluminum foil and cook for 45 minutes at 350 degrees.
Uncover and bake uncovered for another 15 minutes.

Allow to rest for a few minutes before serving.

This sounds delicious and very simple! I will have to make that sometime this week! I might have to consider adding a bit of onion in the mix too. I grew up with my moms homemade mac and cheese which always had onion. Really gives a whole extra level of flavors and compliment the macaroni and cheese well. Paprika is an interesting touch I've never thought of. I'll definitely be trying that
