Tonight heralded "The Last End of Thanksgiving" -- which traditionally here at Casa Electrolux is Turkey Stew made from pretty much everything left over from Thanksgiving dinner (except the pies, cranberry chutney and bread.)
I started by simmering the carcass to make a nice stock. Then I picked out the bones and added the remaining leftover meat.
Next into the pot went a 1/2 cup or so of gravy, a cup or so of mashed potatoes, a similar amount of dressing; then the sweet potatoes and green beans (chopped up a bit).
Then I added one-half of an onion, a half-bag of frozen veggies (yellow squash, carrots & broccoli), a small bag of frozen corn, a can of diced tomatoes and four large cloves of garlic.
Final additions were some herbs and spices: A couple of shakes of salt, fresh-cracked pepper, Italian Seasoning and Bay Seasoning.
It came out really good ... now ... what can I do with all this soup?! Anyone wanna come over for a big bowl??!
