These are a little bit more involved to make, but well worth the effort, the recipe came with my Grandmothers Sunbeam waffle iron bought in the late 40s, we had these every Sunday morning when I was growing up, Grandmother sometimes made them without sugar and served Chicken A La King over them, She ALWAYS did this for her Church Circle Meeting.
3 cups flour
4 tsp baking powder
1 tsp salt
2 tsp sugar
2/3 cup melted butter
2 cups milk
4 eggs separated
Beat egg yolks on No8 speed 1 minute, add milk and beat 1 minute longer,
Add the sifted dry ingredients at speed 4 ,then beat 1 minute at speed 8.add the melted butter and beat 15 seconds at no 8 speed, fold in stiffly beaten egg whites at no 1 speed, For a Sunbeam square waffle iron,use 1 3/4 cups batter pour onto center of preheated grid, close, bake until the light goes out.
I grew up with these light crispy waffles and they really are good.
