Southern Sauteed Skillet Cabbage

The original version of this recipe, called Southern Fried Cabbage, sounded good to me. However, it called for five strips of bacon -- and leaving all the bacon fat in the skillet. {{{*Blarrrgh!*}}}

Here’s a more calorie- and cholesterol-conscious variation.

1 cup chopped cooked ham or turkey ham
1 small onion, diced
1-2 large cloves garlic, chopped
1 med. red bell pepper, coarsely chopped
1 tbsp olive oil

1 large head cabbage, sliced

1⁄4 cup chicken broth
1 tsp vinegar
2 tsp coconut palm sugar
1/2 tsp caraway seeds
Salt & pepper to taste

In a large hot skillet, lightly saute the ham, red bell pepper, garlic and onion in the olive oil.

Reduce heat under the skillet to medium. Add in the chopped cabbage, tossing occasionally, until it begins to wilt a bit.

Add the remaining ingredients. Reduce heat to low, cover and simmer for 10 minutes.

I made a meal of this, having two slices of whole-grain bread along with it.

How I fix cabbage....I cut it up into pieces, pack it into my Aristo Craft saucepan...full, fill it with water, drain all of it off, cover, med heat until the lid is hot, low for 25 to 30 minutes, no seasoning, no water, and its great..and done like this it doesent smell up your house!

I cook my cabbage in the microwave. Just chop it into small pieces, put in a microwavable dish (I use Pyrex or Corning Ware) with a teaspoon or so of water for about 2 cups of chopped cabbage, microwave on high for 3 minutes and it is done. Drain and add whatever spices, etc. that you like. No fuss, no mess, no smell.
