SODA WATER BISCUITS

These biscuits are delicious and could hardly be easier!

(Note: The original recipe calls for Bisquick. However, I only use whole-wheat and whole-grain flour products.)


Approx. 1 tbsp softened butter (soft, not melted)

2 cups Trader Joe Whole Wheat Baking Mix

1/2 cup sour cream

1/2 cup soda water

1 tsp sugar (I use coconut palm sugar)

1/2 tsp paprika

1/4 tsp salt (or to taste)


Preheat oven to 425 degrees.

Coat a 9x12 casserole dish with the softened butter.

Using a large spatula, mix all the other ingredients in a bowl just until batter is well blended – do not over-mix.

Drop batter by large tablespoonfuls into the casserole dish.

Bake until biscuits are golden brown, 12 to 15 minutes.

Let biscuits rest for about 5 minutes before serving.

Makes 9-10 good-sized biscuits. You can double the recipe if you’ve having a big crowd for breakfast.

I had some for breakfast today, along with boiled eggs and cold leftover fried chicken. A real down-home breakfast! :)

so that I would like to make them. But how do I substitute the flour baking mix?

Or else: What kind of mixture is it (so I can find a similar one)?

Here's a recipe I found for Home-made Biscuit Mix:

4.5 cups flour [I personally would use whole-wheat flour]

2 tbsp baking powder

1.5 tsp salt

1/2 cup vegetable shortening

In large bowl, mix dry ingredients. Cut in shortening with two butter knives or a pastry knife until mixture resembles coarse crumbs.

Store in a cool, dark, dry place for up to 3 months. No refrigeration needed.

I make them about 3 times a week..

But I use self rising Virginias Best bleached flour, crisco and whole buttermilk.The old fashioned soft winter wheat flour is the secret to really good Southern biscuits, they are white as snow when you cut one open.
