Parmesan Crusted Chicken
2/3 cup mayonnaise
1/2 cup grated Parmesan cheese
1 tsp dry Italian seasoning
1/2 tsp dried garlic granules (or to taste)
4 boneless, skinless chicken breast halves, each cut again in half
Approx 2/3 cup panko bread crumbs
1/2 tsp or so of paprika
1/2 tsp or so of cracked black pepper
Salt to taste
About 2 tbsp olive oil
Preheat oven to 425°.
In a medium bowl, combine mayonnaise with cheese, Italian seasoning and garlic.
Arrange chicken in a shallow baking dish. Evenly top with mayonnaise mixture, liberally sprinkle with panko crumbs, then dust with paprika, cracked pepper and salt.
Bake until chicken is thoroughly cooked, about 20 minutes.

Steamed Cauliflower with red bell pepper spears and white onions
1 large head cauliflower
1 large red bell pepper
1 medium white onion
Salt and cracked black pepper to taste
Juice of 1/2 fresh orange
3 - 4 tbsps olive oil
Cut the large thick stem from the cauliflower, then cut the head into large florets.
Cut off the end of the red bell pepper. De-seed and remove white fiber. Cut into 3/4-inch-wide spears.
Peel and quarter the onion. Pull apart individual layers.
Arrange the cauliflower in the steamer basket. Place the red bell pepper and onions on top. Steam for about 7 minutes or just until the cauliflower is just starting to soften but is still crisp.
Place the cauliflower into a serving bowl and arrange bell peppers and onions around and on top. Sprinkle with salt and pepper, then drizzle with orange juice and olive oil.
I served this with brown rice.
