This is what I like. Mother and my Aunts made their Potato Salad with half cooked potatos. I boil my potatos until done. just as if I was making mashed potatos.for about 3 pounds of potatos I add one or two finely chopped onions. one finely chopped stalk of celery. a good cup of sweet salad cube pickles. salt and pepper and Dukes mayo . then mash it all up with a potato masher until smooth. taste and if it needs it a tablespoon or two of vinegar wont hurt. this is how my Granny Craig made it and its still my favorite.

I despise half cooked potatoes. I cut up large ones, or boil smaller ones whole until fork tender. I leave the skin on red, or Yukon gold ones.

Sounds great, Hans. There's a burger joint in L.A. that makes a similar style but they add a dollop of horseradish -- not enough to steam your nasal passages but just enough to give an otherwise bland entrée a bit of a kick!


 


(I also don't like half-cooked potatoes.)

A big batch of it in August at the Wash I in Beltsville Maryland.
