Making Zucchini Relish with the old N-50 Hobart

I decided to make Zucchini relish, inspired by one of my best friends, Hans Craig in North Carolina.

It's so good instead of pickle relish in potato salad, on hot dogs, everything.

First thing was to gather my ingredients.

Prepping the veggies for their trip through the Pelican attachment for the old 1952 Hobart N-50 (Thanks again to Hans Craig for the Pelican and Owen Perkins for the actual mixer - Love you guys).

Processed jars are sealed and ready to be given to friends as gifts as well as for my pantry. This recipe made 10 jars. 4 are in my fridge already. Six for my friends.

Once you use Zucchini relish in Tuna Salad you'll never go back to pickles. It's also wonderful in Hans Craig's southern potato salad (his recipe is the BEST I've ever had).

My Moms KA mixer had the "Pelican" food processor attachment.Loved using it---but keep fingers out of it-that blade inside looks like one in a wood chipper!!Remember going to the KA place with her to pick up the attachment-liked seeing the HUGE "drill Press" commercial mixers there!This was in Wash DC area in 1972.
 
The pelican is wonderful. Mine was a gift from Hans Craig of North Carolina. I met him more than 25 years ago, at one of the first meetings of the old VCCC in St. Louis. We had a wonderful time. I'll never forget it. I met Tania and all the rest of the old guard of the VCCC. We've all been friends for many years now.

Hans has shared so many of his Southern recipes, I really should take the time to compile them here on VacuumLand. His potato salad recipe is the best in the world, and everything he bakes comes out moist and delicious.
