The other day when I went to Trader Joe's, the nice samples lady was offering an interesting-looking appetizer. I tried one and immediately went to buy the ingredients to make it. It's deeeeelicious, and could hardly be easier to make.
LENTIL SALAD
1 package Trader Joe’s Steamed & Fully Cooked Lentils
1 12-oz. jar Trader Joe’s Bruschetta Sauce
1 package crumbled feta cheese
1/2 cup diced Kalamata olives
Juice of 1/2 lime
2 tablespoons extra-virgin olive oil
Crumble the lentils into a large mixing bowl.
Add the Bruschetta sauce, feta cheese and olives. Thoroughly combine.
Garnish with a sprig of fresh mint and tart apple slices.
Serve cold with matzos.
