how do you cook ham steak to get it good and brown without burning not having good luck with it at all.my mom use to cook it perfect I just cant seem to get the knack of it so thought I would ask here. she is gone now don't know who else to ask.

I always have it cut kind of thick. I also let it come to room temp and make sure and let it stand on paper towels so as much of the water has drained out as possible. I cook mine on my Guardian Service griddle at just a little over medium heat . I brown it in a little butter and finish up with a little brown sugar on top. Don't over cook and I always use a paper towel to absorb and take off any water that starts to accumulate on the griddle as it browns.
I only turn it once and I let my griddle preheat for some time so the heat is very even. Never cover or it will steam. I hope that helps.

Charlie is right and don't forget to let it sit on paper towels and let all that extra water drain off BEFORE you cook. Only turn it ONE time and when on the second side, that is when I add the butter and brown sugar.
I cannot use iron pans on my range but I do use the heavy Guardian Service Cookware.
I let the Griddle preheat on med heat for 6-7 minuets BEFORE I add the Ham steak. You want the pan to have a very even heat across the whole surface.
Same idea as letting an oven preheat for 20 minuets when doing a pie crust or rump roast and NOT just till it comes up to temp. You want the WHOLE oven to be the same temp and for the temp to not drop 25 degrees when you open the door and put your pie in the oven.
Here is a shot of how nice the Guardian Service will brown meats without grease added to the pan.
