FRENCH TOAST BAGELS

(“When you’re in a pinch, improvise!”)

3 soft bagels, sliced in half
(I used Cobblestone 100% whole wheat bagels)

6 large eggs

4 teaspoons milk or 1/2-&-1/2

4 teaspoons brown sugar (I used coconut palm sugar)


 


3/4 teaspoon vanilla

3/4 teaspoon cinnamon

Salt to taste (I didn't use any)

Preheat your oven to 350 degrees F.

In a medium bowl, beat the eggs with a whisk just until well blended (don't over-beat). Add the milk, vanilla, cinnamon and salt. Lightly whisk to combine.

Liberally butter a large Pyrex baking dish (large enough to hold six bagel halves).

Pour the egg mixture into the dish. Place the bagel halves into the egg mixture, soft (cut) side up. Let them rest for a couple of minutes, then carefully turn them over. Let them rest for another five minutes or so, until most of the egg mixture has been soaked up.

Bake for about 20 minutes, until the eggs mixture around the bagel slices is puffy and golden-yellow.

Remove from oven and drizzle with maple or agave syrup or dust with confectioner’s sugar if you wish.

I would never have thought of that recipe, but it looks delicious! Another one of yours I will most certainly have to try.
