FLUFFY BAKED FRENCH TOAST

1/2 cup all-purpose flour
1 cup milk

6 medium eggs
2 tablespoons brown sugar
  (I use coconut palm sugar)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 tsp baking soda
A pinch of salt

6 large, thick slices of bread
(Bread especially made for French Toast is available in bakeries and some grocery stores. If you can’t find it, stack two regular slices of bread together for each serving.)

Butter

Preheat oven to 350 degrees F.

Sift the measured flour into a large mixing bowl. Slowly whisk in the milk.

Add the eggs, sugar, vanilla extract, cinnamon, baking powder, baking soda and salt. Whisk just until smooth and well blended.

Liberally butter two 9x12 Pyrex baking dishes.

Divide the egg mixture between the two Pyrex dishes. Place the bread slices in and allow to soak up the egg mixture for several minutes, turning once or twice to allow it all to be incorporated.

Bake for 20-25 minutes or until golden brown.

Serve with maple or agave syrup.
