My Favorite Chocolate Cake
I don't make this very often, too much time and its not cheap, but its the best I ever tasted!It won first place many years ago at the Pennsylvania Farm Show.
3 cups packed light brown sugar
1 cup room temp. butter
4 eggs
2 tsp vanilla extract
2 2/3 cups all purpose flour
3/4 cup baking cocoa
1 tablespoon soda
1/2 tsp salt
1 1/3 cups sour cream
1 1/3 cups boiling water.
Cream brown sugar and butter,add eggs 1 at a time beating well after each,beat on high speed until very light and fluffy,blend in vanilla,sift dry ingredients and add alternately with sour cream,mix on low until just combined,stir in water until blended..
NOTE..IF YOU USE A KITCHEN AID...DO NOT EVEN TRY to blend in the water...it cant be done as the single beater throws water and cake batter everywhere...Do it by hand or with a 2 beater mixer like a Sunbeam...I learned this by trial and error!!!
Pour into 3 well greased and floured 9 inch pans,bake at 350 for 35 minutes, cool 10 minutes and turn out..
FROSTING
1/2 cup butter
3 squares "1 oz each" unsweetened chocolate
3 squares semi sweet chocolate
5 cups powdered sugar sifted
1 cup sour cream
2 tsp vanilla
Melt butter and chocolate over very low heat,cool several minutes
In large mixer bowl, combine sugar, sour cream and vanilla, blend until smooth,add chocolate mixture and beat until smooth, frost cooled layers...A lot of trouble but well worth it, I'm making one tonight for Donalds birthday.
