Does anyone remember a dish called sh*t on a shingle? I remember having this as a kid but haven't found the proper recipe

The proper title of the recipe is Creamed Chipped Beef on Toast. It was often served to soldiers in the Army back during World War II -- so often that they got tired of eating it and hence the derogatory name for it. It's actually pretty good once in a while. You'd most likely find it at diners or coffee shops. There used to be a coffee shop in West Bollywood called the Yukon Mining Company that served it but they're closed now. They had it on the menu as "S.O.S."
 
Dont have a recipe...BUT.

Its just white gravy with dried beef in it, very simple,,,,just use equal parts of bacon grease and flour, cook a little bit to get out the raw flour taste...id say 2 to 3 tbsps each, then add about 1 small can evaporated milk diluted with 1 can water, stir like mad until smooth and boiling, salt and pepper to taste...lots of fresh pepper, then chop up one jar of dried beef, add, let cook a few minutes and serve over hot biscuits...really good.

I called Mama and asked her how to make it. Here's the recipe -- it's very easy to make.

The only snag is that I've NEVER seen dried beef in a jar. I don't even know where to get it. Nor did Mama! You should be able to substitute some regular sliced beef luncheon meat or shredded corn beef.



CREAMED CHIPPED BEEF ON TOAST

2 tbsp butter

2 tbsp all-purpose flour

1 1/2 cups warm milk

1 jar dried beef (8 oz.)

Pinch of cayenne pepper


In a medium saucepan over low heat, melt butter. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.

(I assume dried beef is salty. If you use regular luncheon meat or corned beef you might need to add some salt to it.)

Well, all this talk of S.O.S. got me wanting some. The problem was finding the dried beef in jars which I haven't seen in many years. So I used a can of corned beef instead. It doesn't taste exactly the same as the dried beef but it’s good, and actually “beefier” with more beef and less of the creamed sauce.

So may I present...


CREAMED CHIPPED BEEF ON TOAST RE-IMAGINED

2 tbsp olive oil
1 tbsp butter
1 medium white onion, finely chopped
1 can corned beef
2 tbsp whole-wheat flour
1 1/2 cups warm milk
Pinch of cayenne pepper or chili powder
Salt & Pepper to taste.

In a medium skillet over medium heat, melt the butter and olive oil together.

Dump in the onions and sauté until translucent.

Dump in the corned beef. Mash up & separate with a fork and mix in with the onions. Sprinkle the flour over the mixture.

Cook, stirring frequently, until the corned beef is brown and a little crispy, like it would be for corned beef hash.

Add the milk, stirring constantly (I used a large wooden fork) and cook until thickened. Add the cayenne pepper or chili powder, salt and pepper.

If it seems too runny, lightly sprinkle a LITTLE more flour over the mixture and stir in until it thickens. You can add flour a little at a time until the mixture is thick to your liking, but you can’t remove any flour if you add too much!

Serve on toast or over rice. We had a pot of brown rice going already so I served it on that.

Hormel and Armour both make and sell dried beef. It comes in glass jars, Hormel is available in 2.5 and 5 oz jars and Armour in 4.5 oz. The jars make nice juice glasses once the original contents have been consumed. Wally World and Amazon both sell Hormel.

Thanks. I did check Amazon.com and they only sell it in 12-count cases. That's waaaaay more creamed chipped beef than I will ever want to eat in one lifetime!
 
Use ground beef

I make this frequently, just using browned burger & grease gravey (such as described by Kenkart above)over toast (the shingle). Comes close to what I remember from my time in the USMC mess halls in the late 60s
 
My grandfather made this for me when i was little and i used to love it. Saw on Food Network the other day that Trisha Yearwood made this so i had to make it. you can just use ground beef if you want to substitute dried beef.
 
We used to have SOS quite often

When you were hungry and it was still a week til payday, a family of six was glad to get it.
Mom would sometimes make the gravy with canned Tuna, it was 25 cents a can then. or sometimes hamburger. I actually always liked it. Can't get Mom or the other kids to even look in the same direction of the dish now.
