CorningWare "Electromatic" - who has one?

I forgot I had this electric skillet until I cleaned out my cabinets. It's the most even heating electric skillet you will ever use.

Such a great piece of cookware. I think I'll make a Gratin.

The first thing to do is caramelize the onions.

Add the chunks of zucchini. Sautéed in the best olive oil. First cold pressing.

And now for the tomato sauce made of fresh hand crushed San Marzano tomatoes.

Pound the pork loin until they are all the same size so they cook evenly.

Dredge them in Virginia's Best biscuit flour. Use a soft winter wheat flour, preferably self rising.

Sauté the pork cutlets in the best olive oil.

Sauté eggplant slices. To the tomato sauce in the skillet, add the cutlet and top with eggplant and provolone cheese. Sprinkle on some grana Padano.

Cook at 325° for another 10 minutes until everything is melted.

Serve with garlic butter toast and some cold pasta salad. Pork loin gratin with eggplant and zucchini and provolone. It was just delicious. Julia and Martha would approve. Ina would just be eating and shaking her head yes.

We had one growing up. My dad got it for my mom one Christmas. She used it a lot. We had that dish and the larger dutch oven. In 2015 they were getting ready to move in with my sister, I asked about it and my mom told me it stopped working years ago. I would have taken it.

I don't have the Electromatic, but I am currently a bit cuckoo for Corning Ware!
Does that use the 10 inch skillet/casserole?
If so, I've acquired two of those already. I just baked some fish for supper yesterday in one of them.

Yes, it can take the 10 inch casserole. You can use most any corning ware on it.

CorningWare

My grandmother started collecting CW in the mid sixties. She had everything they made and loved all of it. When she finally reached critical mass she had grandpa take a picture of her standing with her collection. Any leftover food cooked in her Corning went right into her other favorite collection, her Tupperware "Millionaire Line!"
