Here's a refreshing drink. Not sure what to call it. It's Arlee's creation. Cantaloupe Delight maybe, or something like that.
Cut up a very ripe and sweet whole cantaloupe, reserving the pulp, seeds and juice from the center.
Cut into chunks and peel the skin. Throw into the blender and give it a good churn until it's completely smooth.
Put the pulp and seeds into a small bowl and add about 1/4 cup of water. Using your fingers, squeeze and press the pulp to release the cantaloupe juice.
Place a strainer over the blender pitcher and pour in the pulp and seeds. Drop in just a PINCH of salt* and give it it another quick whirl.
Pour into a half-gallon pitcher. Add enough water to fill the pitcher. Cool in the refrigerator until well chilled.
Serve in nice glasses garnished with a sliver of cantaloupe and a sprig of fresh mint. Just before drinking it, drop the mint into the juice and swirl it around a bit.
Did I say refreshing?!
(Note: If your cantaloupe is not really sweet, you can add a bit of sugar. Just don't overdo it.)

*Just a pinch of salt will actually make it taste sweeter and will really bring out the flavor. The same works with watermelon by the way.
